It’s Pancake Day! I love pancakes so I’ve put together one of my favorite pancake recipes for you all to enjoy. Pancakes can be really healthy and really unhealthy depending on your chosen ingredients. My recipe on the whole is pretty healthy, what I will say is this is a great recipe to give you energy. So great an hour before training or to start off your day. You can change the ingredients to whatever you prefer but keep the ingredients fresh and healthy. I’ve gone for Vanilla and Blueberry pancakes.
150 g plain white flour
50 g cornmeal (from a Health Food shop)
50 g wholemeal flour
30 g rolled porridge oats
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
360 ml almond milk
120 ml of water
2 large eggs (organic or free range)
2 tablespoons olive oil plus a drop more for frying them
1 teaspoon vanilla extract
1 punnet of fresh blueberries or use 300 g of frozen blue berries
Fresh mint for garnish
This makes 16 X 10 cm pancakes.
Mix the dry ingredients in a bowl
Warm the buttermilk and almond milk for a couple of mins in a pan, whisk in the eggs,oil and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk/beat together till combined.
Heat the oil in frying pan when its pretty hot pour in the batter at about 60 ml at a time. You can make a couple of little pancakes together in the pan. Fry till golden on both sides. Serve with the fresh blueberries and garnish with mint leaves.
These taste really great and can be frozen for another time. ENJOY!!!
